Loctite will lubricate the threads on stainless fastners and prevent galling.  Once assembled there is typically enough antiseize or loctite between the nut and bolt to lube the threads for removal.    Food processing equipment gets washed down at least once a day and have never had a problem breaking down a machine in the field when loctite or antiseize was properly used.  I do agree tho......use zinc plated carbon steel fastners and be done with it.

Problem with anti-seize is that you can't use loctite, friction-locking nuts don't hold as well, and it washes off the exposed threads...meaning that when you take the nut off it'll be grinding against bare SS.
I guess you could add some more anti-seize to the end of the threads before you remove the nut, but why?
Just use zinc steel bolts, they're lighter and stronger without galling problems.

I've spent most of my life fabricating stainless steel  parts and equipment for the food processing and chemical industry.  Now matter the quality of the stainless fastener.......use antiseize!

I ordered some hardware from them, I was satisfied with my purchase. The stainless hardware out there I wouldn't touch after reading the horror stories of frozen bolts..
