LT 500 Jetting - Carboning Up

My setup:

1987 Zilla
FMF pipe and Silencer
Air box intact
Air box lid removed
K&N filter w/outerwear (normal size filter)
Boysen Reeds
Stock carb
32:1 ratio
93 octane
Appx 1500’ above sea level

My problem:

Quad runs great at WOT (mid and top and even low if constantly wide open).  However, after warm up, at the start of a ride or even after a few seconds of idle or slow speed trail maneuvering it gets carboned up and feels like it desperately needs to be full throttle to clear it out...like coughing clears a congested lung.  It never fouls plugs. Slam the throttle and clears out, slow down for even a few seconds and it needs cleaning out again.

Was wondering if anyone has recommendations on jetting as it seems to be a jetting issue.  I have not yet touched the jetting.  My mechanic did tune the carb for the mods but obviously missed something.  I like all my machines to have the ability to run well in different conditions, including negotiating tough trails where WOT is not an option.

Do you happen to know what pilot jet and needle you have?   Also, what clip is the needle set too?

Will the bike idle?
